Queso de hoja isn't watery though.... and one would know that it was a cheese..... he said they told him it had something to do with platanos..... odd. It was served in a cube? I've only ever seen it in a round ball.....

It is often cut into cubes to either eat with a cracker or more often than nought to eat in little cubes off a plate as a picadera.

Hello, I am new here but only to ask about a "cheese" that I tried on the rode while vacationing in the DR. I put "cheese" in quotes because, if I can remember, the driver of our taxi said we should stop and try this food. He described it as a cheese, but it was made of plantains or the peel of the plantains (or something along these lines) and that's pretty much all I know of the food. oh, also another thing, it was like a wet sponge... Please if you can help me figure out its name or how to make it or a picture of it or something, that would be great. PLEASE!! It's killing me! If you have any more questions please just ask.

What you had is called "pastelon de platano maduro"
Roughly like a "Shepard's pie" but instead of mash potatoes it has sweet (ripe) plantains, cheese, and meat... layered.

I didn't know dominicans made spongy white milky cheese from bananas or plantains,

simple stuff: boil ripe platanos, mash, put about half of that in an oven dish. for a filling you can have cooked minced meat (pork/beef) or grated cheese (any, really). then the rest of platanos and some grated cheese on the top. pop in the oven until goldenish on the top (all ingredients are cooked anyways). serve hot.
i am sure chiri - who is a cooking master here on dr1 - has more elaborated and much tastier recipe but i allowed myslef to simplify :)

Hmmm..... in some places they sell fresh dulce de leche, in various flavors, that might also fit the bill....... we never leave Ocoa without it....
