Say I have a student who wants to make queso frito and all we have available is the local northern Maine supermarket. What can he buy here that would be a good substitute?

These are also exotic, but most UK supermarkets stock them so it might apply to the US. Paneer (Indian) or Haloumi (Cyprus) are reasonable substitutes. Otherwise the firmest white cheese?

In the NY area, we have a brand called "Queso Tropical" which is similar in style to Dominican cheese. Check to see if your local supermarket carries it. Otherwise, you can try mozzarella cheese.

Isn't Queso Blanco used for frying?

Mozzarella works.....as does Emmental!

You can also use Swiss if you get the american made one with small holes rather than the good swiss with the big holes!;)

Agreed. I made some today for lunch and it was fantastic made with Swiss Cheese.

Muy sabroso y muy satisfactorio.

If you guys can get mozzarella to fry up well in a pan without completely melting it, you're better than me! BTW, Queso Tropical sells frying cheese, it will say it right on the package - we used to buy it all the time in the States.

coat the cheese with flour first or make a fairly thick batter (flour and water) to dip the cheese first.

I made auyama (sp?) flowers yesterday stuffed with mozzerella and they were delish!!! Yes I coated them with a flour/egg/water batter before deep frying!!;)

BTW gruyere works as well!
