If I were to leave for a short visit to the US after overstaying 7 years and paying the hefty overstay fee, would there be any danger in not being allowed back in? I have read that it is possible to be denied entry solely for staying too long without any other strikes against me but I find that hard to believe.

Do you really think that immigration polices are equal to absolutely everyone? That's not how things work. Every country has immigration policies that are catered to what benefits that country at a certain time.
