i am pretty sure the workers never see a penny of that and it all goes directly into the owner's pocket. and for a reason. this is what goes towards christmas salary and liquidation, eventually.
Depends on the establishment. My gf works at one of the airports and the tips received where she works go into a general fund where they're then split between do-nothing supervisors and the servers. It sucks and it's shady but she makes better than many people in RD and has decent benefits.
