"Secret" to a cold Presidente

As most expats here already know, the secret to a good, cold Presidente(apart from a fridge) is a well know Domincan habit of scraping off of the upper label of the neck of the bottle to prevent the beer from freezing.

What gets me about this phenomenom is it apparently doesn't have to do with the scraping heating the neck of mthe bottle but something else. I've tried my own version by running water over it, etc. but it doesn't work like the tried and true method.

I suppose I should know this stuff given my engineering background, but honestly I'm stumped. Does anybody know the reason?

Well, my only explanation is that if a Dominican does the scraping, it would take time.... ;)
.... and that would help the lousy Presidente beer (Bohemia Especial is much better :pirate: ) to get out of the temperature range which makes it freeze immediately once the pressure is relieved by opening the bottle.

VERY cold Presidente is an OK beer. Not so cold Presidente is an inferior beer, much too hoppy for my taste. I always get a small one for that reason. Of course, "cold" masks the flavor of many things put on the palate.

There are better beers in the DR. mountainfrog mentions one. Amber is another. There are a coule more.

'Course, it's a matter of opinion. I find humor in seeing Dominicans drinking Miller MGD like it's an exotic import. :cheeky:

Holy shyte......you have an engineering background...you've got to be kidding.....where in the f##k did you get a degree??????????

FYI there is more than one type of engineering degrees and if I did learn this phenomenom I must have forgot about it. I think it has something to do with the formation of crystals. Being an engineer I certainly could more than likely find out the reason be researching it but them what would be the fun of that?

Here's one for the titled and non-titled self-professed engineers. When served a visually supercold beer ("vestida de novia"), the bartender performs a ritual which consists of gently turning the bottle upside down and returning it to its vertical position. I've been told that this process prevents the liquid from freezing once it's poured into the glass. Once I performed the ritual myself, however, the liquid froze into an undrinkable mush as soon as it hit the glass. I was told it was my fault, bacause I had inadvertently tapped the bottom of the bottle. Explain that!!

In Santiago, one of the most time honored places in Bader's on 16 de Agosto.

Another place is Bolivar frias right behind the Cibao stadium. Only thing is that too many tigueres hang out there.

OMG that's soooo funny, I was about to ask you about this place Hillbilly, I've been there, but of course is just a little counter and some old fashion refrigerators and the owner, who is like 100. You find these guys drinking, who have been going here for decades and the conversation is always very interesting. And I think they have really good kipes also, with a very cold presidente? mmmmm.

Never heard about scraping the label off. The one I've always seen is you rub your hand up and down the bottle several times (like CCC put it in his own colorful manner)...this seems to work. I've also heard when you pour tip the glass to an angle where you can pour slowly and NEVER touch the bottle to the glass.

Like I said in the original post - I tried the warming the neck with water or my hand and the beer would still freeze on me.

However, scraping the label is the only method that I know that 99% effective - heck, even when it's somewhat frozen at the bottom the neck won't freeze on me whereas before using the other methods when I typically took the bottle out of the freezer and took the top of the beer wasn't frozen at that moment but upon pouring it in the glass the beer would freeze in the neck area first and then spread to the bottom of the bottle - a very curious phenomenom.

You have to rub your hand up and down the whole bottle not just the neck. Maybe you just don't have the right technique to give it a stroking good enough to warm it...:cheeky:

Apparently CCC has a lot of experience on this. Maybe he can show you...

I always thought the explaination for iced up beer was....

The beer has a bit of alcohol in it so its temperature may be lowered below freezing point without it freezing, particularly while sealed under pressure in the bottle. (If you put a plastic bottle of plain water in the freezer, it always freezes solid)
The CO2 in the beer may help that too.
When the cap is popped the pressure goes down as the gas releases from the beer. This may allow the ice crystals to form in the beer molecules, whereas the gas may have interfered in the formation of the ice crystal lattice structure.
I heard a story from a University Lab that lowered a beaker of water to below freezing in a very still room. The whole room was isolated from outside vibration.
After the temperature got low enough, the water still had not froze.
A technician took a spoon and gently tapped the beaker. Instantly the water became frozen. Weird huh?
