Authentic recipes for use while we're in the Dominican?

There's something for everyone - I especially love catib?as (empanadas made with cassava -yuca- flour), arepitas de yuca (cassava fritters), camarones al coco (shrimp in coconut sauce, and Clara has a version made with ginger that is even better), lamb? guisado (stewed conch), arroz con fideos (rice with noodles), crema de auyama (cream of West Indian pumpkin) and pasteles en hoja (like tamales).

I'm cooking crema de cepa de apio for tonight; a simple version with just onion, garlic, cepa de apio (celery root tuber) and thyme. The DominicanCooking.com recipe has additional ingredients.

chiri, those dishes are not easy to do. pasteles, for example, are lots of work. i would not attempt to make most of that stuff. i like both soups thou. yummy.

One thing I miss in DR is good bread. I'm sure it's out there someplace, but not where I live. The best I found was at Tipico Bonao restaurant.

So dv8 inspired me with her bread stories, and I shipped down a bread machine. I get everything ready, and as soon as the electric comes on I start it [we have a lot of blackouts, but when the luz comes it stays on at least 6 hours straight]. So far so good, yum!!!!

The maid is entranced by it, I had to laugh the first time she saw me use it. She said "Aha!! It works like your washing machine!!" [I have a big, automatic Kenmore, which I don't let her touch, but she's fascinated to see that i just push buttons and it does everything, so she equates the breadmaker with it].

Now if I could just tenderize beef in DR...

I haven't found any good bread either, it is actually quite upsetting!

OP if you do buy from fruit/veggie stands or veggie trucks make sure you know the price you should pay b/c they will screw you over in a second.
I think it would just be easier to buy at a normal grocery store for your short time here, just stay away from US brand names and it will be a lot cheaper.

I actually brought one down, and maid used it for the first time today to make beans quickly. We're both a little afraid of it, LOL. We'll practice.

I have 2 at home in US, small and big, both electronic, both not scary..... :)

my bread makes people go nuts :) i have mastered few techniques and if you promise to visit us (we have a guestroom ready) and will teach you how to make the simplest bread and will have few loafs for you :) i made parmesan and garlic monkey bread a while ago and it was gone in a day :)

i love lots of dishes from chiri's list but i cannot do most. it is too much work and it makes no sense to cook something like pasteles for two people.

Cc, u mean u COOK beef!!! Thats why...... raw is best with oignons, garlic, mustard, gerkins, tomatoe sauce, capres and cognac.......

OP, this is a great time to be a bit creative with cooking. As some have said you can find the basics here just like in the US. Pasta, potatoes, fresh vegetables, eggs (I enjoy making a frittata with veggies for dinner), etc...Agree that Aunt Clara's cookbook will help tremendously.

I LOVE, "Steak TarTar", but I wouldn't eat it here.
My first wife was from Thailand, and makes a great Thai version with lots of HOT, toasted crushed peppers!
"Carpachio" is another great way to eat raw beef!
I have eaten that at "Vesuvio's" here in SD.
VERY GOOD!

I use filet from national...... so far so good ( only the point, mind you, not the thicker bit ).
No egg for me on tartare, cognac or sour cream!!! Mmmh.

Be careful I am THE specialist on tartare ( and carpaccio ). Not so much in the making of, than in the tasting of!!!
We traveled around france ( where I live ) witha bunch of friends for 2 weeks. Lunch goats cheese salad, dinner tartare, every day......
We followed the grapes, white at linch, red at night!!!!!

I think you would be well served with a pan Caribbean cuisine. As such sofrito is crucial. And making your own achiote oil makes a big difference. And there is the big divide of tomato or just green. Food processors are so easy, but they just chop things finer and finer. A mortar and pestle works better, technically, but requires elbow grease. And no electricity. The trick is to fry the mashed herbs and onions and garlic until all the water is absorbed. You can tell best by listening. There is a distinct change in the sound. It goes from bubbling to crackling. At this point it can burn easily.

Daisy Martinez of PBS Daisy Cooks Has easy yummy dishes with readily available ingredients.

Her yellow rice is easy and delicious. And sets the standard. morros y blancos.
