I think you would be well served with a pan Caribbean cuisine. As such sofrito is crucial. And making your own achiote oil makes a big difference. And there is the big divide of tomato or just green. Food processors are so easy, but they just chop things finer and finer. A mortar and pestle works better, technically, but requires elbow grease. And no electricity. The trick is to fry the mashed herbs and onions and garlic until all the water is absorbed. You can tell best by listening. There is a distinct change in the sound. It goes from bubbling to crackling. At this point it can burn easily.

delicious! Her recipes for Churros are to die for! Can't eat just one.
