Try the Bacalao (salt cod) in fish cakes. Cod, mashed potatoes, onion, and summer savoury. Roll into cakes, coat with a panko crust, cook lightly on both sides. Serve with homemade baked beans and sweet mustard pickles.I like sardines, my wife not so much. Anchovies on pizzas for sure when available.

Same with mackarel hard to find in Jeanettes. Salmón en lata for a spaghetti. Same with dry sherry, beef…
Oh yes and the real parmazan.
Oh my God.
Bacalao, dried salt cod fish, has been exported from my area to many Caribbean islands for decades. Our fishing schooners would head down with salt fish and return with rum and molasses. I’ve also seen it in stores in the Greek Islands and Portugal. I wouldn’t eat anything with a Chinese label. We ship the raw product to China but how they process it and what quality controls they have in place is anybody’s guess.I liked bacalao a lot, untill one day I bought it here in Belgium, imported from China.
I thought I had a wet dog in the kitchen, not kidding.
Now we only eat in the DR.
