Are they all eggs and bacon and homefries type places?
Dick's has several different breakfasts.

Here is another location on Kite Beach:

Many complaints on FB about how all restaurants in Cabarete are "overpriced" for what they serve.
It seems people going to Colombia in droves these days.
I think the type of tourist who travels down to Colombia is looking for more of a bars/clubs/whores experience than those who would spend a week or two in Cabarete at the beach.

Understanding the goons up north keep telling us those economies are roaring but the lack of American and Canadian (kite surf/ beach bumb lifestyle) tourist in Cabarete tells a different story. Inflation is hurting people's ability to spend on the extras like taking a short vacation...
my two cents.

Cabarete
In the 20 years that I have lived in Cabarete not once have I heard anyone say, 'man I could do with some fried chicken, corn bread and grits'!!! That type of food is definitely geared towards the 'weekend warriors' on the streets of Sosua. If anyone had any sense, and has knowledge of Chinese food, they should be opening another Chinese restaurant there. We know that it works, it worked for literally over 2 decades. It was nothing fancy but it was good and it was cheap. If someone can replicate what was already there, then they are on to something really good. Our Chinese friends worked their asses off and provided Cabarete with one of the longest running family run restaurants in Cabarete and unfortunately due to health reasons they could not continue and it was a big loss not only for this family but for the entire area.

The husband was the chef and had health problems. They've built a small apartment complex in the Callejón and are planning to open a restaurant there soon.

I think you answered your own question, within your Post

Our Chinese friends worked their asses off
unfortunately due to health reasons

U need a Large Family, and you have to work your Arse off. , until you cant any more. and then its Over or you move on .. it cant just be " handed down "
unless its like Cousins or someone like that .
I do know the Koreans ( different culture) used to hand over running businesses to New Arrivals who I think they Sponsored in some way.
They do it in NYC with the Produce Stores ,. also very hard work.
Not sure how the Chinese operate .

but How many People are really willing to put in that amount of Sweat , and a love of cooking / every day .

OTOH, The weekend Warrior restaurants are usually owned by Dreamers who think because they have a $20K bank Roll , are in their 40's and healthy, and now desperately want to Semi-Retire in Paradise , They all think they can pull it off . 90% are wrong . A Couple have made it though so its Humorous to watch them. try.

And so it goes. It is Cabarete, after all . How about this at Martinis:

Are you implying that these prices are high? I don't live in the DR but used to visit often and have eaten at Martinis many times. Great place right on the beach and the food is good. I would have no problem with these prices.

I've never been under the impression there are a lot of breakfast places. Am I wrong?
Plenty that serve gristle as bacon and whose idea of eggs is just not right.
Rare to find a good breakfast in DR so I stick to Avena and coffee, with occasional Chinola juice
