AE, at home my mother also stores eggs outside the fridge. in the summer it is much hotter than here. i have no idea how this stuff can last. i put eggs in the fridge straight away. sometimes i get huevos criollos here: duck, goose and guinea. they are really great but highly suspicious. i put them inside a pot with water to check for floating but still i prefer to fry them rather than boil.

easy test...drop eggs in water in a pot. if they sink, horizontally, they are fresh. if they stand vertically, on the pointy end, they are usually more than 3 days old. if they float, ditch them.

that's what my dad taught me but i am still suspicious of boiling those huevos criollos. in any case they taste so good when fried!

I would never keep eggs out of the fridge, although I've always heard you're supposed to. If I can, I take out the eggs for a while before using them.

It is like filet mignon, get the meat or the eggs to relax at room temperature, therefore they have the full flavor !! i know it is silly what i gona say next...Don t put a women in the freezer just keep her to room temperature, it taste better and it is natural !!

Those price hiccups can boomerang. Drop in price leads to less production then when the demand comes back up they can't increase supply quickly enough. I wouldn't be surprised if they simply cut exports to Haiti to stabilize the market...

Cost effective

It's not unheard of, producers will destroy excess product to maintain price stability or to increase prices. It is more cost effective for them. They will take the short term loss of revenue as the result They can regain the losses having the knowledge of a sustainable stable revenue vs the uncertainty of maintaining a high inventory which will lower prices and have the increased expense of storage and maintenance.

i know these practices are common enough in europe. lots of clothing companies cut their past season stuff into shreds and destroy completely rather that sell for pennies or give away to charity. they maintain the image of the brand.

Health inspectors at my old restaurant would have a minor coronary if eggs weren't kept in the fridge...

"What doesn't kill me makes me stronger" applies to one's immune system...;) But they wouldn't buy that argument...

Haiti has been an easy market because it has been so close. But it seems clear that trade with Haiti is unreliable so they are going to have to ramp up other markets. They do export to Puerto Rico and Venezuela so they do have that technology.. those must be frozen birds, right? And eggs? wonder if they export eggs?
Seems like there should be a rich market in Cuba which imports the majority of its food.

The DR is the only country here in the region that has a strong argricultural market so maybe this will help them get their export market savy up for other sectors in the region, not just to Europe. I know that they do a big business to Europe in the high end market with organic certified tomatos and herbs.

But nothing really with the fruit and plantains. Of course, those may be the things that the other islands have.

The little islands though.. like the Virgin Islands and the tourist islands have very little agricultural production, am I right?

i would not test that saying with those fish i see on sticks, in 90 degree heat, all day.

you are right about productive capacity. they do, however, have an entrenched class of importer oligarchs, who have their sources firmly in place already.
