i solve this by lowering the fire and covering the pan. but most dominicans don't do low fire either.

Seeing as there is still no"Food" thread on dr1 I shall post here. What is the best root vegetable to substitute for Turnips/Swede/ Swede,Turnip here in a stew or casserole?

Yautia would fill nicely. It's as tasteless as turnips.

i only let her cook something once: huevo frito. i was very sick and had no strength to do anything. she poured about quarter cup of oil in a pan, broke an egg in and continued to spoon hot oil on the top on the egg. the result was greasy and rubbery, like used latex condom.

Congrats, you ate a DR style fried egg. The extra oil is ofr the plantains.

I think turnips have a bit more flavor than yautia.
Yautia can be good fried if done correctly. Turnips, not so much.
They can be mashed, with garlic and onions they are pretty tasty.

I understand what you're saying, but if you have enough oil in the pan to scoop, it's too much, LOL. A better way is to add a couple of drops of water to the pan when the egg is almost done and immediately cover it. The steam creates an 'over-easy' egg in about 5-10 seconds.

very interesting....

i'm fine with turnips but sour cream is a big NO. mayo. it's mayo that makes everything better!

Chop up a pound of smoked bacon, fry until just crispy, add to 4cups of cubed cooked "Nirps",garlic "crisps", salt and pepper!!!
The turnips are optional!!!!!!!!!

You can substitute anything in the world for the turnips, it will still be GREAT!!!!!!!

I love Dominican foods! My aunt who's a Dominican visited us here then she cooked amazing foods for us! It was the best!

Anyone ever try the candied cheese? My GF in Higuey had me try it. Hard and no flavor. They sell the cheese in giant bags with the cheese sitting in water like a goldfish. Never saw it before. Can you use the cheese for anything else? Looked like plain farmer's cheese.

The closest is the Dominican Yautia.

i cannot figure what could you be talking about. sold in giant bags with cheese floating inside? like, a piece of cheese per bag or what? candied as in sweet or as in dried? farmer's cheese is white and soft, no?
