My favorite thing for cast iron cooking is a proper grilled cheese sandwich. Nice steady med low heat. I use New England Style Hot Dog buns for the bread and either Swiss, American or Colby Jack Cheese. That and a can of Campbell's Soup with maybe some Goldfish or Ritz Crackers.. Comfort food.

I've got a round flat cast iron skillet I use for Pancakes, French Toast, and Tortillas for burritos. Never even had pancakes or French Toast in the DR and not likely to, unless I bring down some real Maple Syrup..

You'll be my hero if you manage a tender steak!

So, I did the same process using Roti de res sin hueso, corazon de paleta, and one other cut but I lost the label. Coconut oil, griddle hot as hell and smoking, just salt and pepper, cooked till juice running out the top, flip, turn off the heat. I put the whole griddle on the table and we watched them finish cooking for a couple min.

I have to say, it was "ok". Other than filete de res, which is the only cut I have been successful with here, I think it turned out pretty good. Some parts were tender, juicy, and "buttery"

I think I need a butcher! With he right cuts, done right, I may be able to turn Dominican beef into something palatable!

saw some at Jumbo. 1400 pesos. i?ll pass.

The locally made bottle of syrup in my fridge was $12 for a pint last spring.

Time to make some corn fritters on the skillet..
Can of white Shoppeg corn, undrained
Cup of Bisquick
One Egg
A little water to thin, if needed.

Best Burger in the DR!

You will need...

Lodge Cast Iron Griddle, I got it from Casa Cuesta in Santiago.
Carne Molida 2A, about 3 burgers from a pound
Salt
Cheese, Sosua Cheddar did just fine
Lettuce, Tomato, Pickles
Mushrooms
Onions
Buns
Butter

Butter the buns, and toast them on the flat side of the griddle
Make Hamburger into balls, about 3 meat balls per pound. Keep in the fridge until ready to grill
Cut onion, place in a pan (cast iron!) with some butter and cook on low heat for about an hour
Slice mushrooms, place in pan with butter, cook for about 20 min.
Flip the griddle over to the grill side, turn up the heat to med-high.
Put your meat ball on the grill, let it cook for a min or so, then flatten it with a large metal spatula
Sprinkle some salt on the burgers
Let the hamburger cook until the edges are brown and crispy, and juices start to come out the top
Flip over the burger, turn off the heat, place the mushrooms and onions on top, then the cheese over it.
It'll be ready in about 2 min, when the cheese is nice and melted.
Put your burger on the bun, and add lettuce, tomato, mayo, and ketchup.

Best served with a pina colada!

Just had the best steak I've had since I moved to the DR.

I bought filet de res, which is the only cut I've been able to make tolerable. You have to cut off all the casing and tough fat chunks which wasn't easy.

I cut it into chunks about 2" x 2"

Put some coco nut oil on the cast iron griddle, just added salt to the room temp meat.

Got the cast iron griddle hot as it'd go, added a little more oil, and threw on the meat. It sizzled and pooped. I flipped it around a couple times, and only cooked it for a few minutes.

The steak was awesome. Soft, buttery, melt in your mouth just like back home.

As a direct result of this thread, I have 3 different cast iron frying pans packed in the boxes we're shipping. They're like lead weights :)

Anyone ever try using them on a gas grill? I'm also thinking on the side burner too. Too hot in the kitchen sometimes to crank up the flame that high.

Iron leaches out from iron cookware and is consumed with the food. this is good for growing kids and adult women before menopause. Not so healthy for adult men and women past menopause, because the iron accumulates in the body.

I use a small one on the top rack to saut? mushrooms in butter and fresh diced garlic while the steaks are grilling. I preheat it on the lower rack first while the grill is getting up to temp. Works great.

Now I'm hungry for grilled steak.

There was a restaurant that closed near us. They were friends and we asked if they wanted to sell any pots. They said their pots and pans were needed in case they made another go of it, but they sold us some incredible knives. It doesn't hurt to ask.

In my case, this is tragically true. For years I insisted on using only cast iron cookware to prepare my meals, heedless of the warnings. Now so much iron has been absorbed by my body that I weigh 1,213 lbs. We were forced to reinforce the floors in our house. My knuckles and ankles began to rust and had to be replaced with expensive titanium joints. Still, there's nothing like a cast iron pan for searing a steak.
